Mushrooms are one of those ingredients that I absolutely love but often find myself at a loss when it comes to using them in my cooking.
I canât tell you how many times Iâve thrown away a half used box of mushroomsâ¦
I think itâs probably because they have such a unique taste. Mushrooms donât just go with everything. Their flavor (and texture for that matter) need to be considered when youâre coming up with a dish.
This recipe was born out of a few thingsâ¦
Which, Iâm happy to report, is what we have right here. A super easy, super simple, super quick way to use mushrooms and create a nutritious and delicious meal. I give you: my 10-minute garlic + herb mushroom quinoa!
Iâm not kidding you, it only takes 10 minutes to put this dish together. As long as you have cooked quinoa, which I recommend you always keep in the fridge, this is perhaps one of the easiest recipes youâll ever make. you just need to saute the mushrooms with some garlic and shallots, add in your quinoa, season with salt and pepper and then finish off with some fresh herbs and youâre done. D-O-N-E.
Now I will say, I donât think this would be filling enough to stand as itâs own meal, but it goes great as a side. If you do want to bulk it up a little bit, I think it would be fabulous with some chickpeas or even grilled chicken (or shrimp).
Because the flavor are kind of mellow, feel free to get creative when it comes to any add-ins. The point is really that now we have a way to use up our mushrooms and also have a go-to dish when we have absolutely zero time or desire to cook.
