Ingredients:
4 roma tomatoes
1 shallot
1 jalapeno
1 tbsp cilantro
1 lime, zest & juice
1 tbsp. rice vinegar
1 avocado
Directions:
Dice all ingredients (except lime and rice vinegar) and mix. Add lime juice and zest and rice vinegar and mix. Roughly chop one avocado and mix at service.
Red Chili Vinaigrette
Ingredients:
1 cup roasted red pepper
1 clove garlic
1 small shallot
1 tbsp. chili powder
1/2 tbsp. Sriracha
1 cup rice vinegar
2 cups olive oil
Directions:
Combine all ingredients in food processor, adding olive oil slowly while mixing. Add salt and pepper to taste.
