If Mike can go vegan, anyone can :). I've always been particular about my food. Maybe because it's the one thing I have always felt that I could control. So as a 2 year old if I declared it was milk all day, everyday, that it was. Until the pediatrician stepped in and told my mom to put velcro on my refrigerator to force me to gravitate towards other food. Hmmmm…. Well I lived happily as a vegetarian for roughly 4 years until I started dating my husband who is the ultimate carnivore. This man could eat rare steak for breakfast, lunch and dinner. And he seems to really thrive off of it. So gradually I started to eat meat again. But I have to say that since I've incorporated back into my diet my general moods and health went downhill. 

So you know when something is in your heart and you want to do it but you just have to take the leap? I've been on that ledge for at least a year now with returning to a plant based diet. Lately, I have been inspired by vegans online like Brussels Vegan, Lola Cooks, and my dear friend Passport Diva. I decided that for the month of April I will do a month long vegan challenge. This includes me eating vegan in my home state of TEXAS for a week. I'll report back to you the results and be sure to share the recipes I make along the way, as always. I just finished an email from Brussels Vegan and she shared this video with me.
