Sometimes I feel sorry for my kids.  They don't have a say in their birthday treats.  I let them think they have a say,  I'm all for boosting moral, but the truth is they get what I want them to have.  I'll give you a few examples.  Two years ago I convinced my youngest that we should have Candy Land Cupcakes for her birthday.  Candy Land was her favorite game at the time, so it was an easy sell, but the truth was I had a fun idea that I was itching to try out.  Last year I convinced my oldest daughter that she wanted Gingerbread Latte cupcakes for her birthday.  Nevermind the fact that her birthday was in September, I just needed an excuse to test out a recipe!

In all honesty, the kids hardly need any convincing.  They love cupcakes and are genuinely happy to try out my experiments.  I see it as a win-win all around.  Here it is September again and my daughter's birthday is just around the corner.  I asked my daughter what I should make for her birthday.  She said something with apples, and I grinned, because for the first time, what she wanted and what I wanted were perfectly in sync!

Apple Pie Cupcakes

These apple pie cupcakes are probably the best cupcakes I have ever made.  They start with a simple to make white cake (this recipe has been adapted from the Candy Land cupcake recipe mentioned above).  After the cupcakes have cooled, insert a small paring knife into the tops of each cupcake and cut out a small circle and remove the top.  You want a little well in each cupcake.  Spoon a large spoonful of Lucky Leaf Apple Pie filling into each cupcake.

The buttercream in this recipe is my standard frosting recipe.  It combines butter, shortening and powdered sugar.  This time, I also mixed in a whole cup of brown sugar.  Yes, it is a sweet frosting.  Yes, you can reduce the amount of powdered sugar.  You may have to taste as you go along.  The cupcake itself is not that sweet, which is why the sugar-laden frosting works incredibly well in this apple pie cupcake recipe.  The strong cinnamon flavor in the filling partners well with the brown sugar buttercream.  Any description I give you here in this post will not do these cupcakes justice.  I think you need to find a birthday, an anniversary or whatever reason you can come up with to make these apple pie cupcakes yourself!

Apple Pie Cupcakes with Brown Sugar Buttercream
 
A simple white cake filled with apple pie filling and topped with a decadent brown sugar buttercream!

Ingredients
  • 1 cup milk
  • 1 ½ teaspoons vanilla extract
  • 1 cup butter, softened
  • 2 cups sugar
  • 3 cups cake flour
  • 1 tablespoon baking powder
  • 5 egg whites
  • For the buttercream
  • 1 cup butter, softened
  • 1 cup shortening
  • 6 cups powdered sugar
  • 2 teaspoons vanilla
  • 1 cup brown sugar
  • ¼ cup milk
  • ¼ teaspoon salt
  • 1 can Lucky Leaf Apple Pie Filling
Instructions
  1. • For the cupcakes:
  2. • Preheat oven to 350. Line 3 cupcakes pans with liners and set aside.
  3. • In a measuring cup, combine milk and vanilla.
  4. • In a stand mixer, beat butter at medium speed until creamy. Add in sugar until fluffy. In a separate bowl, sift together flour and baking powder. Carefully add flour mixture to butter mixture alternately with the milk, beginning and ending with the flour.
  5. • In a separate bowl, beat eggs whites at medium speed until stiff peaks form. Carefully fold eggs white into cupcake batter.
  6. • Fill each cupcake liner about ⅔ full. Bake for 18 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
  7. • For the frosting:
  8. • Beat butter and shortening on medium speed until creamer. Slowly beat in powdered sugar one cup at a time. Mix in salt and vanilla, brown sugar and milk.
  9. To assemble: Using a pairing knife, carefully hollow out tops of each cupcake. Place a generous spoonful of pie filling into the cavity of each cupcake.
  10. Pipe frosting over apples. Serve
