Sometimes you just need a simple side dish to go with a piece of chicken, fish, or beef. Here is one that is good for you and delicious. Summer is all about simplicity with cooking, and you canât go wrong with some veggies, olive oil, and fresh lemon juice.
2 T olive oil
1 T minced garlic
half a small onion chopped finely
1-2 cups fresh or frozen peas
12 oz artichokes cleaned and cut into nice size chunks (if using canned use a full can)
1 T lemon juice
salt and pepper to taste
1 T parsley or green onions

On medium high heat in a dutch oven or large skillet, heat 2 T olive oil (and a tablespoon of butter if you are okay with the dairy)
Add minced garlic and onion, letting cook for about 5 minutes or until browned
Add peas and cook for about 3 minutes, adding artichokes, lemon juice and salt and pepper
Cook until slightly browned, about 6-8 more minutes
Remove from heat and sprinkle with parsley/green onions and serve with a lemon wedge
Any leftovers can be kept in the fridge for three more days
