Baked Skillet Pancakes are the perfect get everyone to the table {at the same time} kind of breakfast

Oven Baked Skillet Pancake

We’re not exactly a rise at the crack of dawn kind of family.

Certainly during the school year we have no choice but to be up early, and my husband does need to get up for work, but if we had our way, we prefer to sleep in.

I’m not talking sleep til noon like you did in college, but personally, I don’t think anything good needs to happen before 9am, especially on weekends during the summer.

 

Oven Baked Pancakes

 

We leisurely roll out of bed and congregate on the deck, some with coffee, others with juice. It’s one of those things that I will never tire of.

It’s so peaceful, that is until the dogs spot the squirrels and the kids start  complaining that they are starving to death.

Pancakes like these and these  have always been a family favorite on weekend mornings. My trusty griddle gets a workout, but I love a breakfast that serves everyone all at once.

 

Baked Skillet Pancakes

 

Baked pancakes are prefect for just that reason. It’s a very similar recipe to my basic pancake batter, and you simply mix, pour, and bake. By the time the table is set and the coffee is made, you are ready to fill your cake with fruit and enjoy.

Baked Skillet Pancake

Ingredients

  • 1 cup of AP flour {I always use King Arthur}
  • 2 Tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon {optional}
  • 1 cup milk {I use 2%}
  • 2 eggs
  • 3 Tbsp butter {melted}
  • 1 cup of sliced strawberries, maple syrup for topping

Instructions

  • pre-heat the oven to 425, and place the skillet in the oven
  • whisk together the flour, sugar, baking powder, salt and cinnamon {if using}
  • whisk together the milk egg, and butter
  • pour the liquid ingredients over the dry and whisk just to combine
  • pour into the heated skillet
  • bake 20 minutes {the pancake will puff slightly, and then deflate upon cooling}
  • top with berries and syrup

I love not having to stand over a hot griddle on a HOT summer morning   early afternoon to make my kiddos their favorite pancakes, and we all get to eat at the same time.
