Baked Skillet Pancakes are the perfect get everyone to the table {at the same time} kind of breakfast
Weâre not exactly a rise at the crack of dawn kind of family.
Certainly during the school year we have no choice but to be up early, and my husband does need to get up for work, but if we had our way, we prefer to sleep in.
Iâm not talking sleep til noon like you did in college, but personally, I donât think anything good needs to happen before 9am, especially on weekends during the summer.

We leisurely roll out of bed and congregate on the deck, some with coffee, others with juice. Itâs one of those things that I will never tire of.
Itâs so peaceful, that is until the dogs spot the squirrels and the kids start  complaining that they are starving to death.
Pancakes like these and these  have always been a family favorite on weekend mornings. My trusty griddle gets a workout, but I love a breakfast that serves everyone all at once.

Baked pancakes are prefect for just that reason. Itâs a very similar recipe to my basic pancake batter, and you simply mix, pour, and bake. By the time the table is set and the coffee is made, you are ready to fill your cake with fruit and enjoy.
