Now that the big holidays of the year are now over, many people tend to go straight to the old, "time to diet and exercise", mode again!
When I think of "chips", I most certainly wouldn't think of "kale chips"! They are not "hearty" or crunchy like your typical tortilla or potato chip, but in fact, they are way more delicate, light, and quite crispy! But, WOW do they pack a serious whollop in nutrition! You could literally snack on these all day at the office, or wherever, and not feel one inch of guilt! Fiber, energy, antioxidants, serious vitamins and minerals....these chips have it all!! After baked, you can see how the green leaves just darken in rich, vibrant color. Each "chip" is so incredibly flavorful- zingy, crispy, light, and very addicting!! You can't beat it- easy to make, not deep fried in fatty oils, and INCREDIBLY healthy!! So snack on!
Ingredients:
1 bunch Kale (rinsed, dried, chopped w/ center vein removed)
couple splashes of good Balsamic Vinegar
1/4 t. garlic powder
couple splashes of Olive or Grapeseed Oil
1/2 T. Chia seeds
2 T. finely grated Parmesan cheese
salt & pepper
Preheat oven 250F
1) In a bowl, place the dry kale leaves, and add the vinegar, garlic powder, oil, Chia seeds, cheese, and some fresh ground pepper. Toss the leaves to coat. Lay out the coated and seasoned leaves in a single layer on a silpat or foil lined sheet tray. Very lightly sprinkle leaves with salt. (You don't want to "over" salt- since we have the salty Parmesan cheese added as well!) Place in a 250F oven for 20-25 min.
Remove from the oven and allow to cool. Carefully place "chips" in a storage container in a cool dry place.
***I don't recommend a ziploc bag because they could easily get crushed! Enjoy anytime of the day!!
