Barbecue weekends have always been a tradition from where I come. We sometimes gather in our big backyard, we fire the BBQ, and we prepare delicious grilled meat and vegetables. This tradition is quite important for us, because it gathers the whole family and we have time to catch up and talk. And everyone in my family has their favourite grilled meals. Mine are the barbecue chicken wings my mother prepares. The recipe is quite simple and the chicken wings are just amazing. So, here's what you'll need.

Ingredients:

1 kilogram of chicken wings

1 cup of soy sauce

½ cup of sugar

1 cup of white wine

1 Tbsp. sesame seeds

2 Tbsp. sesame oil

1 Tbsp. honey

8 garlic cloves, pressed

1 green onion, finely chopped

1 chilli pepper, finely chopped

Juice of one lemon

Instructions.

1. Get a medium bowl, and mix all the ingredients for the marinade in it. This includes everything except for the chicken wings. Add them one by one and stir until all the tastes mix well.

2. Wash the chicken wings, cut off the claws of them, if there are any, and cut them in half. I personally feel better if I know that the meat is well washed and then salted. You can also add some black pepper if you want.

3. After a few minutes in the salt, you can add the future BBQ chicken wings to the marinade. You'll have to leave it to soak for at least 4 hours. It's best to leave it over night. This way it will have enough time to create a great taste for the meat.

4. After the chicken wings are done marinading, it's time to start the grill. Most people around use gas grills nowadays, but my personal favourite option is the charcoal barbecue. Nothing can replace the amazing smell of smoked and barbecued meat.

5. After the grill heats up to the proper temperature, you should put the chicken wings on the grate. Barbecue the meat for no more than 5 minutes from each side, and be careful not to burn it, because the border between grilled meat and burned meat is very thin.

Notes.

According to a very skilled BBQ cleaning team I had the pleasure to meat in Melbourne, I found out that you can also get a pretty nice result if you use the oven to grill your chicken wings. All you have to do is preheat the oven to 200 degrees and place the chicken as a single layer on a rack which is placed over an oven tray covered with aluminum foil (it will be easier to clean it!). The baking should take no more than 30 minutes, depending on the size of the wings.
