Fresh mint and blackberries make this mojito delicious and refreshing!
My mom and sisters have HUGE green thumbs. Â They can literally place a stick in the ground and it will grow into a majestic tree. Â I on the other hand, have the thumb of death. Â I kill everything I lay my eyes upon. Â I'm not kidding. Â Last year my mom gifted me a gorgeously fragrant, mature basil plant. Â "All you have to do is water it" she says. Â I swear I watched that plant like a hawk. Â I watered it when it looked droopy, I moved it around, spoke to it, caressed it and within a week it was dead. Â No pesto for me.
This year my mom offered up a sizable mint plant. Â I wanted that plant in the worst way. Â Fresh mint is an essential ingredient in these blackberry mojitos. Â I knew if I had all those mint leaves at my disposal, then that would mean the mojitos would really be flowing! Â But I stopped myself because I knew that flourishing mint plant would be a goner before I even had a chance to set it on my deck.
I never realized how lovely mojitos were until I had this recipe. Â Now I make it every single chance I get. Â Last summer was all about shandy's and mudslides. Â This summer is all about the mojito! Â As I mentioned earlier, the key to this recipe is starting with lots of fresh mint. Â That's what makes this mojito taste crisp and refreshing while plump blackberries make it luscious and sweet. Â I mixed sparkling lemon water into my mojitos. Â The tart lemon flavored water really seemed to make all the individual flavors come alive.
If you can keep plants alive then invest in a big mint plant. Â You will want to keep these mojitos around all summer long!
