This is an Asian fusion cocktail inspired by a Korean TV show - "Let's Eat Solo." Made with lychees, which are rooted in China, this cocktail is influenced by a mix of many Aisan regions. My version of the Blue Lychee Cocktail is made with fresh lychees.
Cocktails are my favorite thing to experiment with in the kitchen. You can come up with a dozen variations to one concoction. With it being back to school time and for many of us back to work time with the summer winding down, cocktail hour is the perfect challenge.
Iâm one that likes to unwind in front of the TV with a cocktail in hand, and thanks to Netflix and Amazon I have access to just about anything I want to watch. Lately, I have been watching international flicks and since the usual prime time shows are not back on yet, I have even been binging on international TV shows. To make a long story short. I ended up watching a Korean drama, with subtitles of course, and discovered a blue martini with lychees that became a must have for my cocktail hour. I found a recipe on Epicurious and made a few changes to make this Blue Lychee Martini.
