Blueberry Muffin Bread

This is a hard post for me.

As I sit here and type I am only 1 day into a 5 day juice cleanse.

A cleanse I desperately need.

Summer is a time of indulgence it seems. Ice cream, s’mores, more ice cream. And now that fall is right around the corner I’m finding it hard to button my pants.

Literally.

I refuse to shop, so a cleanse it is.

Suja is delicious. Really. I love every single juice, but you see bread and I, we go way back. That’s probably the reason I need the cleanse.

And this isn’t just any bread, it’s blueberry muffin bread. Muffins in bread form.

Bread with streusel; it’s killing me.

Knowing it sits right there on the counter. Taunting me with its smell.

But I will not crack. I will be strong. I will drink my juice and like it. Especially cause this stuff is pricey

I  most certainly did not plan my week well at all. I should be posting kale and spinach recipes.

But you’re not juicing right? Go right ahead and eat it up.

Blueberry Muffin Bread

Ingredients

  • For the muiffins -
  • 2 cups whole wheat flour
  • 1 cup of AP flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup of brown sugar
  • 2 tsp vanilla
  • 2/3 cup milk
  • 4 Tbsp butter {melted}
  • 1 cup of blueberries
  • For the streusel -
  • 2 Tbsp AP flour
  • 2 Tbsp brown sugar
  • 1 Tbsp coconut oil

Instructions

  • pre-heat the oven to 350
  • coat a loaf pan with cooking spray
  • whisk together the flours, baking powder, baking soda, cinnamon, and salt - set aside
  • whisk the brown sugar, eggs vanilla, milk, and butter
  • pour the wet ingredients over the dry
  • mix to combine
  • fold in the blueberries
  • pour into the prepared pan
  • make the streusel -
  • combine the flour and brown sugar, pour in the oil, stir, and sprinkle on the loaf
  • bake loaf at 350 50 - 60 minutes
  • cool on rack
