Since last week was ice cream week and I was amazingly overwhelmed at work all week, I had to make my ice cream this weekend. I was trying to think of a flavor I hadnât seen on the world wide web and then I remembered this little bottle of Natural Butterscotch Extract I picked up at the Savory Spice Shop but had never used. I love shopping here. It is next door to Con' Olio Oils and Vinegars. Between the two stores great meals have been created! (Thatâs a great Saturday of shopping in Austin with Krista.)
I have two ice cream recipes in my stash. One is a cooked custard type and this one I came up with when I wanted ice cream NOW! I didnât want to wait for the custard to chill overnight.
My mom always made butterscotch cream pies with brown sugar and I donât know what else. I donât have her recipe. I know butter and brown sugar were involved. So I added the brown sugar blend to the mixture and it gave it a nice flavor.
