Brussels Sprouts Salad (Adapted from Giana De Laurentis on Food Network)

Ingredients

Dressing
Juice from ½ lemon
¼ cup olive oil
Salt (to taste)
Pepper (to taste)

Salad
1 lb brussels sprouts, outer leaves only
2 cups arugula
¼ cup almonds (lightly toasted in toaster oven)
1/3 cup parmesan cheese

Preparation

  1. Whisk together all dressing ingredients and set aside.
  2. Blanch and drain brussels sprouts leaves,
  3. Combine brussels sprouts leaves, arugula and almonds in large bowl.
  4. Toss in dressing and cheese.
