AGGIO Baltimore, a new restaurant showcasing Chef Voltaggioâs approach to Italian cuisine utilizing local ingredients atÂ
Power Plant Live!, Baltimore's premier dining and entertainment destination located one block from the Baltimoreâs Inner Harbor.Â
âGrowing up as a Maryland native, I spent a lot of time in Baltimore, and Iâve always envisioned becoming a part of the rich culinary scene here,â says Voltaggio.
A relaxed fine-dining restaurant, AGGIO draws from the simplicity of Italian cuisine, placing the spirit of Italian fundamentals within the context of his beloved Mid-Atlantic home.Â
âAt AGGIO, Iâm using ingredients that an Italian native living in the Mid-Atlantic region might use. For example, instead of using Parmesan cheese, Iâm using a great Parmesan-style cheese from a local producer,â says Voltaggio.
Changing daily, the menu combines Voltaggioâs Italian heritage with his comprehensive vantage point of local agricultural traditions. Beets take the place of the classic âvitello,â and are topped with tonnato sauce. Blue crab and old bayâsynonymous with the Mid-Atlantic region are introduced in a new way through Voltaggioâs spinach tagliatelle, buttered popcorn, and âour bay,â a housemade old bay seasoning. New Baltimore-exclusive dishes will include Ricotta Gnocchi oxtail ragu, bitter chocolate, orange, celery pine nuts and Lasagne Verde lamb bolognese, sheeps milk ricotta, smoked pecorino.
At AGGIO, the wine list focuses on classic Italian varietals, and the cocktail list, featuring Italian spirits, recalls Rat Pack Personalities, like Peter Lawford barhill gin, strega, barolo chinato, byrrh, lemon, egg white and the Joey Bishop espolon reposado tequila, campari, cappalletti, uncouth serrano lavender vermouth, fernet.
The bi-level eatery shares the inviting and comfortable finishes of AGGIO DC with grey, silver and cream-colored accents. Upstairs, white tablecloths line the 56-seat formal dining space and adjacent to the formal dining room is a private dining lounge for up to 12 people. Downstairs, the slightly more accessible space features a stylish bar and lounge, with wooden floors and a 66-seat dining room, where a quilted leather banquet for 6 people acts as a focal point.
âBryan and I had always talked about opening an Italian inspired restaurant. The opportunity to open AGGIO in Baltimore came at a chance meeting with Blake Cordish and we fell in love with the space and the genuine excitement of The Cordish Companies as a whole,â said Staples.
AGGIO Baltimore is located at 614 Water Street at Power Plant Live! The restaurant opens on the heels of AGGIO DC, which made its debut on Valentineâs Day 2014 inside RANGE at Chevy Chase Pavilion.
