Caprese + Kale Pesto Sliders ~ I love a good sandwich –– especially one that can feed a crowd –– and an easy and satisfying dish that works for most groups is always a good thing to have in your back pocket in my opinion thus Caprese + Kale Pesto Sliders are here. An added bonus on this recipe is that you could make a few extra batches of the kale pesto (yum!) and freeze it for a later day to throw on top of your favorite pasta dish or simply serve it over some grilled chicken. Use your favorite buns (or grab some gluten free ones if that’s your thing) and start the assembly line to put them all together. When making them for a crowd I use bamboo skewer sticks cut in half to hold them together or jumbo toothpicks for easier stacking onto a platter. These little sammies would be great for brunch, lunch and/or dinner not to mention poolside because we all know those days are coming soon.

Caprese + Kale Pesto Sliders

Ingredients
For the Kale Pesto
  • 4cups fresh kalechopped
  • 1large clove garlicpeeled
  • 1/2cup olive oil
  • 1/2cup parmesan cheeseshredded
  • 1/2cup nuts (I used pecans or try walnuts, pine nuts or almonds)
  • 1/2teaspoon kosher salt
  • 1/2teaspoon ground black pepper
For the Sliders
  • 3large tomatoes
  • 6ounces fresh mozzarellasliced into 1/4" rounds
  • 1/2cup red onionshaved into thin slices
  • 6-8small slider buns

Instructions
  1. Combine all ingredients into a food processor or blender and pulse until smooth. Then set aside.
  2. Open up sandwich buns and lay them out onto a flat surface. Top each -- both top and bottom buns -- with a heaping teaspoon of kale pesto and spread out evenly. Next top the bottom halves with 1-2 slices of mozzarella, followed by 1-2 slices of tomato, followed by a few slices of the onions. Place top halves over to make sandwiches and serve.
