Why is it that everything tastes better in bowls?

I mean seriously. I find myself eating pretty much every meal out of a bowl. That’s a lie. I eat every single meal out of a bowl even if it totally should be on a plate or in a glass. Bowls just make me happy.

Like okay… smoothies. Really smoothies deserve to be in glasses, with their brilliant jewel tones and sipped out of cute little paper straws. But not me. You better believe I’m taking that smoothie and putting it in a bowl, then trashing it up with all sorts of toppings.

Whether it’s because I really love ice cream or have some bizarre affinity to bowls, smoothie bowls are pretty much the light of my life right now. I mean what could be better than a big bowl of fruits and veggies, blended together and topped with a variety of superfoods? Not only does it turn into this amazingly delicious meal, but it’s also energizing, healthy and makes you feel vibrant!

Today I’m sharing a recipe from the new cookbook, Simple Green Smoothies, which I’ve adapted ever so slightly so that I can serve it in a bowl. Because…it’s a bowl. Yep. (<– but you get the picture)

Simple Green Smoothies is a cookbook that I believe should be in every single home across the world. Smoothies have the power to truly transform your health and they’re such an easy way to sneak in load of veggies. But for most people, especially those just getting started, green smoothies can be scary, intimidating, and if you don’t make them right, kind of gross.

That’s why this book is a must-have. Jadah and Jen, the authors and founders of Simple Green Smoothies, have figured out the formula for making these magical green drinks taste out of this world amazing. And their book has over 100 different recipes. Yes, ONE HUNDRED! Before this book I would rotate though about the same 4 – 5 smoothies. Now? My green smoothie world has been cracked wide open and my mornings (and snacks) have gotten a whole lot more interesting.

What I also love about this book is that they have the smoothies broken out by category. So you can figure out what you need – like energizing, post-workout, etc., – and find a smoothie that has been specifically developed for that reason.

BUT my favorite, favorite thing about this cookbook is the 10-day Kickstart program which is a series of 10 different green smoothies to help you get started with your new smoothie lifestyle. The smoothies are simple, packed with nutrients and most importantly delicious.

The smoothie I’m sharing with you today is the Caramel Cashew Delight, which I’ve only slightly modified to make it extra thick and creamy so I could serve it in a bowl. It was the absolute perfect way to wake up. I felt like I was eating a bowl of decadent ice cream with caramel and vanilla swirls, but instead it was a low-glycemic, fiber packed bowl of green magic.

When I need a little pick me up, I always make a green smoothie bowl. They're quick, easy and absolutely delicious. Plus they're nourishing!

Caramel Cashew Green Smoothie Bowl

Prep Time: 25 minutes

Total Time: 25 minutes

Yield: 1 serving

Ingredients

  • 1 cup spinach
  • 1/4 cup non-dairy milk (or water)
  • 1 ripe pear, halved and cored
  • 2 medjool dates, pitted and soaked for 20 minutes
  • 1/4 cup raw cashew pieces, soaked in hot water for 20 minutes
  • 1/4 cup cooked quinoa
  • 1/2 teaspoon vanilla powder
  • Handful of ice (or 1/2 frozen banana)
  • Toppings: sliced pear, hemp seeds, quinoa flakes + vanilla powder

Instructions

  1. Add all the ingredients to a high powered blender and blend on high until smooth and creamy.
  2. Pour into a bowl and top with desired toppings.

Notes

I halved the recipe since I only made it for me. Most recipes in the book serve 2.
