Finish summer off strong this week with these EASY Caramel Iced Coffee Popsicles! You only need 3 ingredients.

Yesterday, I climbed into the attic and brought down bags of fall decorations for our home. We might be gearing up for colder weather in the upcoming days, but I had to finish the summer off with one final treat. What better way to close out summer, than these Caramel Iced Coffee Popsicles. I love waking up to a hot cup of hot coffee but this dessert allows me to eat it in the morning or save it for an afternoon pick-me-up.

It’s simple to make but I do suggest keeping the kids away unless you want them to enjoy a coffee popsicle. Mine were drooling over the fact that I was making popsicles. Little did they know that I was making them just for me. Sometimes grownups need a dessert that they can enjoy all to themselves.
