Chicken + Brussels Sprout Slaw Salad ~ This salad could quite possibly be my new favorite. It’s not only loaded with flavor but lots of color from Brussels Sprouts, Radishes, Carrots, Onions, and Cilantro –– which by the way is currently satisfying my latest episode of spring fever. Do you have it too? It only took a few warm, sunny days in a row (nice!) and just the mere thought of spring break around the corner gets me in the spirit. Along with springtime, we know that even hotter days are not far behind which brings to mind eating lighter fare. I am one of those that can eat a hearty salad almost anytime of day. So … with those things in mind here is a Chicken + Brussels Sprouts Slaw Salad to satisfy those hunger cravings while keeping those unhealthy things off your dinner table.

I’m serving this one over crackers but you can eat it right out of the bowl or even serve it on toast.

Chicken + Brussels Sprout Slaw Salad

Ingredients
  • 2cups cooked chickenshredded
  • 2cups fresh Brussels Sproutsshredded
  • 1cup carrotsgrated
  • 1/2cup radishgrated
  • 1/2cup green onionchopped
  • 1/2cup fresh cilantrochopped
  • 2Tablespoons coconut oilmelted
  • 2Tablespoons apple cider vinegar
  • 1/2teaspoon sea salt
  • 1/2teaspoon ground black pepper
  • 1Tablespoon sesame seedsoptional
Instructions
  1. In a small bowl combine coconut oil, apple cider vinegar, salt & pepper, then whisk together well and set aside.
  2. In a large bowl add shredded chicken with Brussels sprouts, carrots, radishes, green onion and cilantro and gently mix together. Drizzle vinaigrette over the top and continue to stir together until well combined. Top with sesame seeds. Serve as is or over crackers or along side toast.
