Take your place at the table

The amounts suggested below will make about three awesome sandwiches; depending of course on the size desired for your lunch!

Whether you're packing food for the kids, prepping a pic-nic, or planning your afternoon fuel-up at work, this hearty delight will surely satisfy.

Ingredients:

    • 2 cooked chicken thighs (I used the leftovers from the Roast Chicken recipe)
    • 85g goat's cheese (For those in Nova Scotia, check out Ran-Cher Acres' cream chèvre)
    • 2 heaping tablespoons of Haskap Sauce
    • Handful of sprouts
    • 2 tablespoons of mayonnaise
    • 6 slices Sourdough spelt bread (or your favourite alternative -La Vendéenne is a gorgeous option on the East Coast)
    • Salt and pep

Method:

    • In a small bowl, mix the goat cheese and Haskap sauce. Season with salt and pepper to taste. Set aside.

      In a medium mixing bowl, separate the chicken meat and disregard the bones to compost. Using your fingers, break up meat into small bite size pieces. Add mayo and season with salt and pepper to taste. Set aside.

      Cut (six pieces of) bread to desired thickness and place three pieces on your working surface. Spread Haskap/goat cheese onto these pieces, add chicken mix and top with sprouts. Top each with remaining bread (unless you prefer open-faced sandwiches : ) Slice in half, place in container or enjoy on the spot !
