I really like spicy food and I try to work that flavor into recipes whenever I can.  I also like chipotle peppers.  The combination of spicy and smokey is one of my favorites.   That’s why I am so happy this recipe for Chipotle Roasted Cauliflower was successful.  Cauliflower is a vegetable that is a little on the bland side and definitely needs a little kick to get it going.  While I was making it, I was thinking, is this too easy?  Why hasn’t anyone used chipotle sauce in roasted cauliflower recipes?  Is this going to totally fail and I’ll have to throw away this entire baking sheet of cauliflower?  Things a person thinks about when developing recipes for a food blog…while also trying to make sure they have a good side dish for dinner :)

As I’m writing this post, it’s a Monday morning…and not a very good one already, even as Mondays go.  I woke up to another day of cold weather (16 degrees but the wind chill made it feel like 2 degrees), our completely house-broken 8-month old puppy Nola jumped out of bed and decided that peeing in the guest bedroom was an excellent way to start the week, and my washer decided to stop working with 4 inches of standing water and a tub full of soaking wet towels.  Yes, I had to ring dry each towel by hand and, yes, I’m ready to go back to sleep and just start a new day tomorrow.

It’s days like today that I’m happy to have recipes that are quick and healthy.  By the time Monday rolls around, it’s time to put down the bread and desserts and start eating healthier again.  I roast vegetables almost very night for dinner and usually just season with salt and pepper.  This time I decided to spice it up (literally) by tossing some fresh cauliflower florets in a couple of teaspoons of chipotle peppers adobe sauce before roasting.  All I can say is yummmmmmmy!  The chipotle favor takes the usual drab, unexciting, tasteless cauliflower to a delicious new level.  J and I loved the leftovers in an omelet the next morning and I would never, ever use leftover cauliflower in an omelet!

Chipotle Roasted Cauliflower

Ingredients
  • 1 large head of cauliflower, separated into bite-sized florets
  • ¼ cup olive oil
  • 2 tsp of chipotle peppers in adobo sauce, canned
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cumin
  • juice from ½ fresh lime
  • optional: fresh cilantro, chopped
Instructions
  1. Preheat oven to 425 degrees.
  2. In a large bowl, mix together the olive oil, chipotle sauce, garlic powder, onion powder, oregano, salt, pepper and cumin. Add the cauliflower to the bowl and toss in the mixture until each piece is coated.
  3. Place coated cauliflower on a large baking sheet and spread out so pieces aren't touching. Roast for 15 minutes, turn cauliflower over, return to oven and roast an additional 10-15 minutes.
  4. Sprinkle the lime juice over roasted cauliflower and add cilantro, if desired. Toss well and enjoy!
  5. Can be served hot or at room temperature.
