Chcolate Cookie.DSCN8469 I have a weakness for the rich combination of dark chocolate and raspberries and since I am most happy baking I can’t help myself to make that the key flavor of many desserts and treats. For a simple and quick fix I go to my recipe for Chocolate Cookies. It comes into play as a foundation for me to add my personal Kryptonite in the form of Dove Promises in raspberry and dark chocolate swirl.

I also like my sweets, SWEET…but I’m not a snacker who binges on several when I can get my sugar high form a cookie or two so I can walk away satisfied without feeling I’ve done a bad, bad thing. These little cookies are packed full of rich, decadent chocolate with that burst of berry to balance them perfectly.

Chocolate Cookies
~Yields about 40 cookies

  • 1 cup unsalted butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2/3 cup cocoa powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon fine salt
  • 2 cups all-purpose flour
  • 2 cups chopped chocolates of choice
  1. Preheat oven to 350 degrees.
  2. In a large mixer bowl beat butter, sugar, eggs and vanilla until light and fluffy.
  3. Add the cocoa, baking soda and salt to the butter mixture and blend well.
  4. Gradually add the flour in two batches mixing until just blended.
  5. Gently fold in the chopped chocolate.
  6. Drop by rounded teaspoons onto ungreased baking sheet. Bake 10-12 minutes or just until set.
  7. Cool slightly on baking sheet; remove to cool completely on a wire rack.
