Chocolate Overnight Oats with Warm Raspberry Compote

Start your day with a healthy breakfast! How about chocolate overnight oats topped with warm raspberry compote, almonds, seeds, cacao nibs and a splash of coconut milk. YUM! Hope you all having a nice week!

Chocolate Overnight Oats with Warm Raspberry Compote

Servings: 2-4 Time: 15 minutes Difficulty: easy Print

Ingredients:

For chocolate overnight oats:

1 cup rolled oats 2/3 cup canned coconut milk 1/3 cup filtered water 2 ripe bananas, peeled and mashed 2 tbs unsweetened cacao powder 1/4 teaspoon cinnamon 1/2 teaspoon vanilla extract

For Raspberry Compote:

6 oz raspberries 1 tablespoon butter
1-2 tablespoons brown sugar, packed (i used 2 tbs as my raspberries were not very sweet) 1/2 teaspoon vanilla extract 1/2 teaspoon cinnamon 1 teaspoon fresh lemon juice

To serve: almonds, chia seeds, buckwheat seeds, cacao nibs, coconut milk, etc

Directions:

To make chocolate overnight oats: place all ingredients in a blender and blend for on low for 10 seconds. I prefer a little bit of a texture, so it doesn’t taste like a baby food😉, but it’s totally up to you! Refrigerate for at least 4 hours or overnight. To make raspberry compote: In the morning, heat a skillet over medium heat and add butter. Add brown sugar and let it cook for a minute until it start to caramelize a little bit. Add raspberries, vanilla, cinnamon and lemon juice. Cook for couple of minutes until berries start to soften. Remove from heat.
Top your breakfast bowl with raspberry compote, almonds, seeds and any other toppings as desired.
