Chocolate Overnight Oats with Warm Raspberry Compote
Start your day with a healthy breakfast! How about chocolate overnight oats topped with warm raspberry compote, almonds, seeds, cacao nibs and a splash of coconut milk. YUM! Hope you all having a nice week!
Ingredients:
For chocolate overnight oats:
1 cup rolled oats 2/3 cup canned coconut milk 1/3 cup filtered water 2 ripe bananas, peeled and mashed 2 tbs unsweetened cacao powder 1/4 teaspoon cinnamon 1/2 teaspoon vanilla extractFor Raspberry Compote:
6 oz raspberries 1 tablespoon butterTo serve: almonds, chia seeds, buckwheat seeds, cacao nibs, coconut milk, etc
Directions:
To make chocolate overnight oats: place all ingredients in a blender and blend for on low for 10 seconds. I prefer a little bit of a texture, so it doesnât taste like a baby food, but itâs totally up to you! Refrigerate for at least 4 hours or overnight. To make raspberry compote: In the morning, heat a skillet over medium heat and add butter. Add brown sugar and let it cook for a minute until it start to caramelize a little bit. Add raspberries, vanilla, cinnamon and lemon juice. Cook for couple of minutes until berries start to soften. Remove from heat.
