Coriander-chicken-kebab
Yes, I know this is the third chicken kebab recipe in a month! You must have seen chicken tikka kebab and chicken tikka masala recipe s which i posted not too long ago. To tell you the truth, i cooked all of these the same day, just that recipes are coming a little late. I explained in chicken tikka masala post that how it becomes so much easier for me to host big parties with these chicken recipes. Basically with minor changes i can easily make three varieties of chicken. Having the homemade chicken tikka masala powder in my kitchen all the time really helps.

Coriander-chicken-kebab So how coriander chicken kebabs are different from chicken tikka kebabs? Well first of all, these kebabs are mildly spicy compared to chicken tikka kebabs, at they same time these are very refreshing and fragrant. Basically you can make different types of kebabs by changing the marination. I have used a lot and i mean really a lot of coriander for these kebabs. I must have mentioned before, coriander is my favorite herb. I think coriander adds freshness and fragrance to any dish. Apart from coriander, these kebabs do not need red food colour like chicken tikka kebabs. We get fresh green colour from coriander, of course.

I have also not smoked these kebabs with coal; you will remember from chicken tikka kebab recipe. As i made both these kebabs on a same day, i wanted to keep different flavors, fragrances and textures in all different dishes. But you can definitely smoke these kebabs following the same process; which was, heat a coal, when it is burning hot, put it in a bowl and place it in the middle of the pan of these kebabs. add 2-3 green cardamoms and cloves in this bowl. Drizzle some ghee or oil on the coal and quickly cover the pan. Oil will help make smoke and it will give smoky, tandoor like flavor to the kebabs.

You can also add mint, mint also does wonders to these kebabs. But as i was using mint dip and i also used mint in the chicken tikka biryani,I thought of not overdoing it. Yes, Chicken tikka Biryani is another chicken recipe; great one pot meal which your guests will just love. I will try to post this recipe soon as well.

The process of making Coriander kebabs is more or less same as chicken tikka kebabs. Apart from marination everything else is same. So i believe this will come out as very easy recipe. Serve these kebabs as starters with drinks or in lunch or dinner. These are versatile types. Ingredients
  1. 500g chicken breast
  2. 3-4 tbsp yogurt
  3. bunch of coriander
  4. 2 green chillies
  5. 1 tbsp chicken tikka masala powder
  6. 2 tbsp ghee/butter or oil
  7. 1/2 tbsp lemon juice
  8. Salt to taste

Instructions
  1. Cut the cube size pieces of the chicken breast to make chicken kebabs. Drain all the water and pat dry the chicken pieces.
  2. In a blender add coriander leaves with green chilies and salt to make a smooth paste. Add a little water if required. Keep it aside to add in marinade. We will need 4 tbsp of this paste.
  3. Transfer chicken pieces in a mixing bowl and add yogurt, make sure there is no water in yogurt. You can put yogurt in a strainer for around half an hour to strain excess water.
  4. In the mixture, add 4 tbsp of coriander paste, chicken tikka masala powder, salt, lemon juice and 1 tbsp ghee (clarified butter). You can add any oil of your choice.
  5. Cover the bowl and keep in refrigerator for an hour for marination.
  6. Preheat the oven at 190’C or 370F. Place chicken cubes on the skewers. If you do not have skewers, cover a baking tray with aluminium foil, grease it and place chicken onto it. Put chicken in oven. Coriander chicken kebabs will be ready in 15-20 minutes. Brush chicken with ghee or oil in between. If you are using tray, change the sides in 7-10 minutes.
