We all love the canned cranberry relish, which always comes out looking so delicious....Okay, so maybe not. Last year, my dad found a recipe for this delicious cranberry relish and ever since then I've been craving it. Normally I am not a big fan of cranberries, but this relish had a great balance of sweet and tart and since it contains all fresh ingredients, it's very good. Not to mention it's quite pretty too, unlike it's canned counterpart.
This is a good way to sneak some fruit into your Thanksgiving meal without sacrificing taste, and it's easy to make as well. There's very little prep time involved, and you can even make it the day before your feast since it has to be refrigerated anyway. I was pleasantly surprised at how many people tried it at our Friendsgiving feast this year (we had 12 people over) and that the majority of them really enjoyed it.
Cranberry Apple Relish
Yield: About 5 cups
Ingredients
1) In a large bowl, add the sugar, marmalade and lemon juice and combine well. Add the cranberries, raspberries and apples and mix.
2) Cover and place in the fridge until ready to serve. Stir before serving.
