I don’t know if you’ve ever tried Crock Pot Ribs but if you haven’t, you should! No, these are not a true BBQ rib by purists’ standards but if you a looking for a no fuss, fall of the bone tender, finger licking good rib – these ribs fill the bill! I cooked these in the crock pot and then just baste them with sauce and pop them on the grill (or in the oven) to get a little char and grill flavor on them. They are the busy Mom’s answer to BBQ in no time.

These Crock Pot Barbecue Ribs with Strawberry-Chipotle Barbecue Sauce is a great addition to our barbecue sauce recipes. It’s strawberry season and I had some strawberries I needed to use and decided to turn them into this sassy barbecue sauce. I particularly like sweet sauces on my ribs with a little bit of heat but the heat in this can be turned up just by adding another chipotle of two. I like the strawberry flavor on the front end followed by just a small amount of heat on the back end and this sauce delivers. It’s really amazing just how much of the strawberry flavor really comes through in this sauce.

Ingredients
  • 2 racks of ribs, portioned into segments
  • 4 Tbsp House Blend Seasoning
  • 1 Tbsp Smoked Paprika
  • Strawberry-Chipotle Barbecue Sauce (Recipe Follows)
Instructions
  1. Combine the house blend seasoning and smoked paprika.
  2. If the ribs have the sinew coating the back, use a paper towel to aid in pulling it off the back of the bones and trim away and excess fat, if necessary.
  3. Thoroughly coat the meat side of the ribs with the rub.
  4. Place the ribs meat side down inside the slow cooker and cover.
  5. Cook on LOW until tender about 6 to 8 hours.

Strawberry - Chipotle BBQ Sauce

Serves: 2 cups
Ingredients
  • 2 cups fresh strawberries, hulled and sliced
  • 1⁄3 cup sugar
  • 1⁄2 cup ketchup
  • 2 Chipotle peppers in adobo sauce (more or less to taste)
  • 2 tbsp balsamic vinegar
  • 1 tbsp dry mustard
  • 1 large garlic clove, minced
  • 1 tbsp smoked paprika
  • ½ small onion, grated
  • 1 tbsp house blend seasoning salt
Instructions
  1. In a saucepan, combine strawberries and sugar over low heat to macerate the strawberries.
  2. Once the strawberries have begun to soften, add the remaining ingredients and heat through.
  3. Adjust seasonings to your tastes. set aside and allow to cool.
  4. Pour sauce into a blender and puree until smooth.
