Advocaat is the Netherlands most typical drink, often associated with grannies playing cards
close by the fireplace, having their little glass on the side. Sometimes, itâs topped with whipped cream or rum soaked raisins.
Not the most glamorous but after all, why should we mind? Itâs so creamy and tasty that itâs definitively time to give advocaat a new image.
This egg liqueur will of course remind you eggnog but itâs thicker as you actually canât drink it, only enjoy it with a spoon.
Here, itâs a springy version combining the tangy orange flavors with some Indian influences thanks to cardamom pods.
At the end, itâs much better than the industrial version, but Iâm sure youâve already guessed
that. Itâs also quite stronger in alcohol (hips), a good 30° against the usual 5-10°.
If youâre starting to make your own drinks, advocaat is the ideal first step as it doesnât require hours of maceration or infusion. In 10 minutes, itâs on your table ready to be savored, what
else could you ask for?
For a 70cl bottle:
In a bowl, put 6 yolks + 1 white and whisk it well.
Add then 350ml of sweetened condensed milk and keep on whisking until everything is well mixed.
Itâs now time for the grated zest of an orange + 1tsp powdered cardamom and another good whisk.
Last touch, 150ml of 94° alcohol. In Belgium, you buy it in supermarkets, at the drink section, but in France for instance, itâs at the pharmacy.
Whisk while you add the alcohol and suddenly, your golden liquid will turn into a smooth cream, itâs almost magical.
Fill your bottle with it and, if you can, wait
for a week before trying it. If not, itâs not a huge deal either; we should sometimes claim our right to be greedy.
