Easy Fish Tacos

Things get quite busy in our house during the week, so easy dinners can be a lifesaver. I make a lot of quick dinners during the week and this is one of the easiest ones that can be ready in less then 30 minutes.

The fish fillets are baked in the oven until flaky. I used lime, chili powder, coriander, cumin and a little bit of garlic for the sauce. While the fish is baking, I prepare all the toppings: zesty cabbage slaw, mango salsa, and sliced avocado. I like to add some sliced jalapeño and radishes. I also heat the tortillas while the fish is cooking. Assemble the tacos anyway you like it and top with whatever topping each person wants to use. You can add black beans and Mexican style rice if you want. Enjoy!

Easy Fish Tacos

Ingredients:

For the Fish:

1 lb fish, use any type of firm fish fillets (tilapia, cod, halibut, etc); I used tilapia 1 tablespoons olive oil juice and zest of one lime 1 teaspoon chili powder 1/4 teaspoon coriander 1/4 teaspoon cumin 1 garlic clove, grated sea salt and pepper to taste

To serve: cabbage slaw and/or mango salsa (find recipe here)

Other Taco Essentials:

corn tortillas avocado, lime, jalapeño, etc

Directions:

Preheat oven to 400 degrees. Whisk all the ingredients together. Place the fish in a oven-safe dish, pour sauce over the top, and bake for 15 minutes or until fish is done (flakes easily with a fork). Remove fish from the oven and flake the fish with a fork into bite size pieces. While the fish is baking, prepare the cabbage slaw and the salsa ( or you can use store bought if you like). Assemble the tacos. Top fish with desired toppings and serve.
