Easy Mini Spanakopita are the perfect appetizers for your next gathering or party or as game day eats for Super Bowl 50!!

Easy Mini Spanakopita

Who’s ready for the Super Bowl?  Not me!  I’m too busy moving and don’t have time to even think about making appetizers for a party.  That’s why I’m so surprised I was able to get this easy mini spanakopita recipe out this week, but that just shows you how effortless it really is to make.  I’ve been making this recipe for quite a long time, like 10+ years, way back in the day when you couldn’t even buy the pre-baked phyllo dough shells. #hardtimes  The filling is not the same as the one I use in my traditional Spanakopita, but instead is a quick and easy one so the whole recipe can be finished in less than 20 minutes.

The funny thing is, I haven’t made this in forever, but thought about it when trying to come up with posts for Super Bowl snacks.  When I pulled my cooking notes for this out of my recipe box, I actually wrote down instructions for making homemade phyllo cups (out of the prepared dough sheets not homemade, homemade).  Well, we all know that the phyllo game has changed since the last time I made these.  Now you can buy a lovely box of pre-baked shells in the freezer section of your grocery store.  There’s only 15 in a box and it’s got an awful lot of packaging for just some little (breakable) cups but it’s ultra easy and it makes being lazy look cool.

Fuzzy close up pic is baaack!  I was trying to capture the creaminess of this little devil but instead the lens (not me, of course) focused on the side of the flaky phyllo cup.  And my terrible short nail with the chipped polish.  Yes, I am slowly, but surely, breaking off every single one of my nails with packing and moving around boxes.  Along with chipping the color the day after I put on new polish.  I bet Kim Kardashian doesn’t break any of her nails or chip her polish moving.  I also bet Kim just leaves all her stuff in her old house, moves, and buys all new stuff.  Life is unfair.

Speaking of lazy, I’m the total opposite of that with packing because I feel like I’m doing it 24/7.  I’ve come to the conclusion that moving is stupid and the person(s) who decided against building all homes/houses on wheels is stupid too.  I’m so looking forward to moving to this new house and can’t wait, but this whole “packing up everything you own” situation and moving it to another location is slightly out of control.  I’ve got boxes all over the place and I haven’t even started packing up the kitchen and the big hallway pantry that contains all my overflow kitchenware.  Then, out of all these boxes, I have a bunch of stuff in them that I don’t want the movers to move so I (really Hubby J) will be moving them instead.  Y’all know what I’m talking about, it’s all the important stuff, like a special mixing bowl and the china that was my Grandmother’s, the numerous boxes of family photos, mementos, and all my cookbooks where I would just die if one of those boxes were lost or misplaced or if anything broke.  I’m also moving all my “special” kitchen items that are irreplaceable.  Okay, they aren’t really irreplaceable, but they definitely are special and I’m attached to them so I’m not letting them out of my sight.  All in all, there’s a lot of boxes that I’m making us (again, we’re talking about just J here) move ourselves so I’m kind of thinking, what’s the point in hiring movers?  Maybe the movers should be paying us.

Ingredients
  • 16 ounces frozen chopped spinach, thawed and squeezed dry of all moisture
  • â…” cup feta cheese, crumbled
  • ½ cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp freshly ground white pepper
  • salt, if needed
  • 30 pre-baked frozen mini phyllo shells (also called fillo shells in grocery store)
Instructions
  1. Preheat oven to 375F degrees.
  2. In a large bowl, mix together the spinach, feta, sour cream, garlic powder, onion powder, dried oregano, and white pepper. Stir until all is thoroughly combined. Taste mixture and add salt, if needed.
  3. Place all phyllo shells on a baking sheet and fill each with 1 tablespoon of the spinach/feta mixture. Baked in preheated oven for 12-15 minutes, until mixture is heated throughout and shells are nice and toasty. Serve immediately.
