peanut butter chocolate kiss cookies

I have been using this flour-free peanut butter cookie recipe for over 10 years now, and it is by far one of my favorites! I used to make these cookies for the other children in my family that I used to babysit during the week when mine were still babies. With so many little ones to feed, I was on the hunt for an economically friendly and simple, quick cookie recipe that would satisfy everyone in my family. The ingredients and ratios are so easy to remember, which is why I’ve been using it for so many years.  I felt like whipping some up tonight for my husband and now big kids, so I thought it would be kinda neat to share a recipe that I’ve been using for over a decade. Feeling old lol.  It was one of the first cookie recipes that I felt confident enough to make without reading a recipe.

I used dark chocolate candy melts for the center since they’re a little larger than traditional chocolate chips. This recipes takes minutes to whip up and is a great peanut butter cookie recipe for those of you who are still getting familiar with baking. It’s also a perfect recipe for a gluten-free diet since there is no flour in them whatsoever. My mom follows a mostly gluten-free lifestyle, so she’s inspired me a lot about pulling out my dietary restrictive experience and sharing it on my blog. Thanks momma! ^_^ 

Ingredients for Easy Peanut Butter Chocolate Kiss Cookies: 

1 Cup Natural Peanut Butter either smooth or crunchy is fine!

1 Cup Sugar

1 Egg

1 TSP Vanilla Extract

1/2 TSP Kosher Salt

Directions:

1. Using your hand mixer at low speed, combine all ingredients. Dough should be slightly sticky but firm.

2. Roll about a tablespoon and a half of dough into a ball and place it onto an aluminium or parchment lined baking sheet.

3. Press a chocolate baking chip into the center of each cookie gently.

4. Place cookies into the freezer for about 15 minutes. This will help them maintain their shape while baking.

5. Bake cookies for about 12 minutes at 350 degrees F.

6. Once cookies have cooled down a bit, carefully transfer them to a cooling rack. They will be very soft when they first come out of the oven so be careful!
