Easy Shrimp Tostadas
These light and refreshing shrimp tostadas are loaded with your favorite fixings! Quick, simple, delicious, healthy, and so fresh!
They make a flavorful, satisfying dish that can be served for lunch or light dinner. I served them with sliced avocado, radishes and roasted tomatillo and mango salsa. so goodâ¦. This recipe is great for entertaining too. It makes a wonderful presentation along with salsa, guacamole, and a pitcher of margaritas.

Ingredients:
For the Shrimp:
1.5 lb large raw shrimp, shelled and deveined 1 tablespoons olive oil 2 garlic cloves, minced 2 roma tomatoes, seeded and diced 2 scallions, thinly sliced 1 teaspoon chile powder juice of one lime 1/4 cup cilantro leaves sea salt and pepper to tasteTo serve: salsa ( i used Trader Joeâs Roasted Tomatillo & Mango Salsa)
Other Taco Essentials:
tostadas or corn tortillas 1 sliced avocado, lime wedges, 2 medium radishes (thinly sliced), jalapeño, etc
Directions:
In a large skillet, heat 1 tablespoon oil. Add garlic, tomatoes and scallions and sauté for couple of minutes. Add chile powder, salt, pepper, and shrimp and cook for 3-5 minutes. Add lime juice and cilantro leaves.
