Think of this homemade Easy Spicy Espinaca Dip as a healthier version of your standard queso dip…okay, that’s actually not even remotely true; however, it does have fresh spinach in it and tomatoes so it’s got that going for it 👍


For what it lacks in the healthy department, it makes up for with taste. The combination of Pepper Jack and cream cheese is the perfect balance between taste and creaminess and the contrast of the vegetables make it more complex than a run-of-the-mill white queso dip.

…BUT it’s also a great starter for football tailgating parties or game day eats or really any occasion where people want to eat some braggadocious cheese dip! (I know braggadocious isn’t used corrrectly here but it’s sounds funny and I’ve been dying to use it. heeheeheehee)

I like to serve my easy spicy espinaca dip with some organic blue corn tortilla chips. Other dipping options include yellow tortilla chips, pita chips, crackers, toasted baguette rounds, or even serve it with some assorted fresh raw veggies, if we are back on that healthy talk again. Like all cheese dips, this one is best served right before you’re ready to eat it too.

Easy Spicy Espinaca Dip is made with freshly shredded Pepper Jack cheese, diced tomatoes and chilies, and fresh baby spinach. Ready in just 20 minutes!

Serves: 8 servings
Ingredients
  • 4 cups freshly shredded Pepper Jack Cheese
  • 8 ounces regular cream cheese
  • ¾ cup half & half
  • 1 (10 ounce) can of diced tomatoes and green chiles (like Rol*Tel), undrained
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 cup fresh baby spinach, chopped
Instructions
  1. In a medium saucepot over medium heat, combine cheeses, half & half, and Rol*Tel. Cook until mixture melts, stirring occasionally, for about 15 minutes.
  2. Stir in the garlic and onion powders with the fresh spinach. Continue to cook sauce over medium heat for another 5 minutes, stirring occasionally.
  3. Serve immediately with your favorite chips, crackers, and/or assorted raw vegetables.
