Strawberry Cheesecake Cookies

These cookies are SO easy to make it’s ridiculous! My kids absolutely loved them! I recently explained why I’ve been on a strawberry cake mix kick when I shared my Strawberry Butter Cake Recipe. I love discovering new ways to use cake mix, and did it last year when I made these Funfetti Cake Box Cookies for my daughter’s birthday party! So super simple when you have so much to do. I topped these strawberry cookies off with a very simple cream cheese glaze which firms up nicely in the fridge.  I do recommend that these cookies are kept in the fridge until ready to serve since the quick glaze isn’t heated! These cookies will remain moist too!

Ingredients

for Strawberry Cookies:

Strawberry Cake Mix + ingredients on box minus water

1/2 TSP Baking Powder

1 tsp Almond Extract

for Easy Cheesecake Glaze:

1/2 Cup Cream Cheese softened at room temperature

1 TBSP Milk

1/2 Cup Confectioner’s Sugar

1/2 TSP Vanilla Extract

Directions

for Strawberry Cookies:

1. Combine Cake mix, baking powder, almond extract and oil + eggs (my cake mix calls for 2 eggs and 1/3 cup canola oil but follow your instructions).

2. Chill cookie dough in the fridge for about 15 minutes. Scoop out a golf ball size amount onto a silicon lined baking pan.

3. Bake cookies for 14-16 minutes at 350 degrees.

4. Once cookies are cool, decorate with cheesecake glaze.

for Easy Cheesecake Glaze:

1. Whisk together all ingredients. Glaze should be a little runny, but still thick.

2. Using a piping bag, (no piping tip needed) decorate your cookies as you wish. I just made some cute little hearts and patterns for fun since Valentine’s Day is coming up, but feel free to do whatever you’d like!

I hope you enjoy this super easy recipe! <3 They taste like sweet strawberry goodness with a hint of cheesecake. These cookies are so light, chewy and delicious! I will continue to play around with cake mix for some more fun recipes. It’s pretty cool and a lot of fun! ^_^
