I love breakfast for dinner. Almost anything I would make for breakfast on the weekend could end up in my weeknight meals. Bread, eggs, meat and cheese in any combination with a side of hashbrowns is my favorite. My dad loved breakfast too. I still swear he invented breakfast burritos. He made them at home on the weekends after we moved to El Paso with fresh chorizo and oh boy were they good. Of course, now you can get them everywhere.
I am not a big sweets fan for breakfast but just a bite is good. My Mom (the Tumbleweed Contessa) always made pancakes for us on the first day of school. I was always so nervous they sat like a rock in my stomach. My boyfriend is crazy for pancakes. So, it works. He orders pancakes and I get just a bite with my new favorite thing Migas. I'll have to make that for you sometime too.
I have had a picture of this for ages but I hadn't gotten around to actually writing the recipe down. My poor mom. We are great at telling her what we had and even sending her pictures, but we get this very confused look on our face when she asks us for the recipe.
I really love this one. Mostly because I love bread and this is dinner surrounded by bread! I have seen many versions of this but none were exactly what I wanted so this is my version.
