For todayâs adventure in lunch packing, I give you the Elvis dog!
Parker came home from school yesterday asking about pairing bacon and peanut butter. I can only imagine the conversation amongst his 8-year-old buddies that triggered this.
But I explained the supposed origins and the inclusion of a banana. All of which intrigued Parker, though I wouldnât go as far as to say he was excited to try it.
But try it he will. As I was fumbling about the kitchen this morning searching for inspiration, I noticed the whole-wheat hot dog buns sitting next to the bananas. And I also happened to have an open package of applewood smoked bacon in the refrigeratorâ¦
So I gave it shot. And yes, the banana likely will brown a bit by lunch. He probably wonât care (I did wrap it tightly when packing).
Usually when I pack banana I make sure itâs either tightly wrapped in a tortilla, or splashed with citrus juice, either of which prevents browning. But for todayâs lunch, the former wasnât an option and the latter sounded like it would ruin the flavor of the sandwich.
For a side, I went with endive leaves filled with hummus. Admittedly, the total mass of vegetables offered by two endive leaves isnât all that great⦠But quantity isnât the issue. I just want him to embrace â or at least accept â the endive.
