Quick and delicious Caesar Salad


I've been learning Spanish lately, in a kitchen environment, which means I'm really good at saying 'chicken salad' and not much else. & did you know that the Caesar salad was first created by a Chef in Tijuana, Mexico? So despite the name, I consider it Mexican food! and call it ensalada! 



But to the point: having salads for lunch is one of my favorite ways to get in a quick, inexpensive lunch without much effort at all.

I always keep cut up (almost stale) bread in the freezer for easy access and always on hand croutons.  & they're so easy to make!

  1. Turn the broiler setting on the oven onto high
  2. Chop desired amount of bread into squares and put onto baking sheet

3.  Pour about a tablespoon of oil onto bread on tray
4. Toss with any spices you desire or no spices at all! I use a mix of traditionally Italian spices and salt, pepper, and cayenne pepper, but use whatever spices match your salad at the moment! These are so easy to make you should make them fresh for every salad!

5. Put these adorable little guys into the broiler on the top shelf and set your timer's memory for 45 seconds-1 minute, You should check them this frequently, they really do finish quickly!

These croutons are just brilliant! Look at how beautiful they are! I frequently forget they even sell croutons pre-made at the store.  But these are so delicious and so ridiculously easy and cheap that I would never buy a bag/box of croutons! 

They have the perfect crunchification on the outside and the perfect chewy denseness on the inside, perfectly seasoned, exactly to your tastes, and best of all warm from the oven to top your salad!

While these are cooking whip yourself up some great salad dressing!
Seriously, any kind of salad dressing you can buy in the store, it's cheaper and tastier to make it yourself at home!

Try my recipe for Caesar Salad! It's not exactly low calorie, but it certainly is the tastiest version of this i've tried & it's quite easy & i don't see a single unhealthy ingredient!


Caesar Dressing: 
  • 1 tsp mayonnaise (optional) 
  • 3 cloves of garlic
  • 1/4 cup freshly grated Parmigiana cheese 
  • 3-4 little anchovies from a can** minced
  • salt
  • pepper
  • 1/2 cup olive oil 
  • juice from one lemon
  • 1 egg 
  • 1 tbsp dijon mustard (any mustard would work fine, but I think a nicely spiced mustard is best, sometimes I do 1 tsp whole grain mustard, and 2 tsp dijon mustard)
  • 1 tsp worcestershire sauce

*Some sources may tell you anchovies are optional, but in my opinion it's really not optional!
**If you buy your anchovies canned in oil, I like to pour the oil from the anchovies into my salad dressing

A bed of spinach, lettuce, kale greens, spring mix, or anything you wanted makes the base of your salad
I almost always add tomatoes when I have them on hand, parmigiana cheese is the perfect cheese for a caesar salad.  Then I add the dressing, mix it up, and top with my freshly baked croutons!

The whole meal takes about five minutes depending on how hungry you are and how quickly you work!
