This Fiesta Chicken Tortilla Soup is delicious, healthy, and pretty darn easy to make!

I know it’s starting to get warmer in some parts of the country, but it’s still soup season here in upstate New York.  In fact, my wife and I just went skiing for the first time in years last weekend, and we had an absolute blast!  Of course, we mainly stayed on the green beginner’s trails…but it was fun being out on the slopes again.  (It had been almost 20 years since the last time I went skiing.
