I’m over at Gluten Away today, writing a guest post for my friend, Taylor Miller. Click here to see the recipe for these light and extremely flavorful fish tacos. Perfect for the summer!

No recipe from culinary school this week. We started learning the cuisine of Italy. All I can say is there’s been lots of gluten! Homemade pasta including ravioli stuffed with butternut squash, fettuccine with meat sauce, trenette (thin, linguini-style pasta) with pesto, etc… No tasting for me! The only dish I thought I could maybe re-create was the gnocchi since it is potato based and doesn’t use that much flour. It had an amazing tomato sauce on top. I’m going to try it soon and when I get it right, I will definitely share it with you!

May is Celiac Awareness month. I’m so happy to be part of a blogger campaign for the National Foundation for Celiac Awareness sharing our personal stories about celiac disease. It is also Food Allergy Awareness Week May 12-18. Check out FARE’s website for materials you can use to help raise awareness. Kyle Dine is actually coming to perform at our elementary school on May 16th! So exciting! We will also be hanging these posters up around the school and distributing the PAL Presentation to kids and their families.

Raising awareness of both celiac disease and food allergies is so important to me. As you know, my family is impacted by both. Every person we speak to about these issues is one more who becomes aware and can spread information on to others. I find that people are very interested and receptive to learning about our signs and symptoms of celiac disease, the way we were tested and diagnosed, how we found out about our kids’ life-threatening food allergies and the types of foods we can and cannot eat. In culinary school, instead of being met with resistance when I ask to change recipes a bit in class to make them gluten-free, I am often thanked by my classmates for sharing this information with them. They regularly express their interest in learning more.
