Fudgy Marshmallow Brownies ~ Soft, Chewy Brownie Topped with Marshmallows and Chocolate Frosting! I’m going to let you in on a little secret today. Well, it’s really not a secret and you might have already figured it out if you read my blog posts regularly. My Mom is my best friend. She’s an amazing woman and she’s my “person”. She gets me. She doesn’t judge me. She listens. She supports. She’s that person in my life that all of you wish you had in your life and I hope you do!

She’s so cool that my friends have often told me they love her too because of her kindness and love that’s she’s shown them over the years. She was that mom that would bake you and your friends cookies in high school at 10 pm because you asked and she rocks. True story.

My mom also rocks in the kitchen. This is where I get my talent from. She’s a recipe follower though and I think I stress her out just a little when I start throwing things in that aren’t called for on the recipe. Over the years she’s learned to look the other way when this happens and try to trust me.

There are some recipes that I don’t dare alter and today I’m sharing with you one of those. This is my mother’s secret weapon. The treat that everyone begs for. This is how my family bribes teenagers to come out and “rock pick” in the spring. The promise of my mom’s Fudgy Marshmallow Brownies. I’m telling you these treats have powers. I’m thinking if you are trying to snag a guy he will propose after one bite. I actually have no doubt in my mind that he will! Fudgy Marshmallow Brownies ~ Soft, Chewy Brownie Topped with Marshmallows and Chocolate Frosting!

Today I’m bringing you these fabulous brownies plus I’m partnering with Bon Appetit and Epicurious to talk about the importance of face-to-face time in the kitchen. I love to spend time with my family in the kitchen weather it be my mom, Miss K, or other family members. I find it a great way to connect and bond with them. I remember licking the spatula and giggling over stories with Mom growing up and Miss K is quickly learning to grab the spatula and follow in my footsteps. I can’t wait to create long lasting memories between Miss K and I plus Grandma while making treats!

Currently one of our favorites spots to create memories in the kitchen is at our cabin. We are up there a lot throughout the summer and everyone pitches in to help with meals. I usually head up the main dishes with Mom assisting then Grandma and Miss K are on clean up duty! It’s so fun to watch my mom and Miss K interact while doing dishes. Miss K is talking a mile a minute nodding her head and making hilarious facial expressions and my Mom is giggling. These are memories I’m going to cherish the rest of my life and I’m pretty sure they are too!

Fudgy Marshmallow Brownies

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 20 bars

Serving Size: 1 bar

Fudgy Marshmallow Brownies

Ingredients

  • 1 (18.3 oz) package Betty Crocker Fudge Brownie Mix + Ingredients to prepare
  • 2 c. marshmallows
  • 6 Tbsp milk
  • 6 Tbsp butter
  • 1 1/2 c. white sugar
  • 1/2 c. chocolate chips

Instructions

  1. Prepare brownie mix according to package directions.
  2. Cover prepared brownies with marshmallows immediately after baking and set in hot oven that's been turned off until they puff up. Remove from oven
  3. In a medium size saucepan bring milk, butter and white sugar to a boil. Boil for one minute. Stir in chocolate chips, stirring mixture until they are melted and frosting is smooth. Spread over brownies.
