We are eager edamame, eaters.  We eat them as a spread, in salads and certainly all on their own.  As soon as I serve them, they are gone.  My kids pop them in their mouths like the are candy.  The only person who vehemently resists the little beans is my husband.  When I make edamame, he eats about 5 beans and the calls it a day.  He claims his dislike stems from the fact that he grew up on a soybean farm.  I'm not buying it.  No matter,  that just means there will be more edamame in the bowl for the rest of us.

I found a local farmer selling terrifically fresh whole edamame.  I have never tasted anything like them. The beans literally burst out of the pods and into your mouth.  I often see edamame pods served with chili peppers and garlic.  While this suits my fiery tastes, my kids wouldn't tolerate it, so I came up with this garlic and Parmesan recipe.  I made no less than 4 bowls of this edamame in just a few days.  My kids couldn't get enough of it!!

I actually prepared my edamame in the microwave.  I placed them in a bowl with a tablespoon or two of water and covered the bowl with a damp paper towel.  They will only take a few minutes to cook.  You don't want them soft, they still need to have a little bite.   Immediately toss your edamame into a bowl of ice water. This will stop the cooking process and keep your edamame crisp and green.

Toss your edamame with olive oil, garlic and Parmesan cheese.  Adjust those ingredients to your taste.

Once you try this fresh edamame recipe, you will never have it any other way!

Garlic Parmesan Edamame
 
Crisp, fresh edamame coated in olive, garlic and Parmesan cheese!

Serves: 6
Ingredients
  • 1 lb whole edamame pods
  • 2 tablespoons water
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • ½ teaspoon salt
  • 1 tablespoon Parmesan cheese
Instructions
  1. Place edamame in a microwave-safe bowl. Add water to bowl and cover. Heat for 3-4 minutes or until pods are slightly tender. Immediately plunge edamame in a bowl if ice water. Allow pods to sit for a minute or two before draining.
  2. In a bowl, top edamame with olive oil, salt, garlic and Parmesan. Toss to coat.
