You will be blown away by how good this Garlic Parmesan Edamame tastes! Â Whether you eat this as a side or snack, you will never want to eat edamame any other way!
We are eager edamame, eaters. Â We eat them as a spread, in salads and certainly all on their own. Â As soon as I serve them, they are gone. Â My kids pop them in their mouths like the are candy. Â The only person who vehemently resists the little beans is my husband. Â When I make edamame, he eats about 5 beans and the calls it a day. Â He claims his dislike stems from the fact that he grew up on a soybean farm. Â I'm not buying it. Â No matter, Â that just means there will be more edamame in the bowl for the rest of us.
I found a local farmer selling terrifically fresh whole edamame. Â I have never tasted anything like them. The beans literally burst out of the pods and into your mouth. Â I often see edamame pods served with chili peppers and garlic. Â While this suits my fiery tastes, my kids wouldn't tolerate it, so I came up with this garlic and Parmesan recipe. Â I made no less than 4 bowls of this edamame in just a few days. Â My kids couldn't get enough of it!!
I actually prepared my edamame in the microwave. Â I placed them in a bowl with a tablespoon or two of water and covered the bowl with a damp paper towel. Â They will only take a few minutes to cook. Â You don't want them soft, they still need to have a little bite. Â Immediately toss your edamame into a bowl of ice water. This will stop the cooking process and keep your edamame crisp and green.
Toss your edamame with olive oil, garlic and Parmesan cheese. Â Adjust those ingredients to your taste.
Once you try this fresh edamame recipe, you will never have it any other way!
