I think it's time I explored: the potato on this blog. At home cooking without potatoes is nearly impossible. They go in salad, in meat dishes, by themselves, for breakfast, second breakfast, lunch, second lunch?,  and dinner. Quite the carb masters perhaps, but moderation is key.

Moderation for everything is important, next time we'll talk some more about that.

One of my favorite things about potatoes is how versatile they are. Perfect for all seasons. This recipe was prepared by both Brian and me. Very simple and straightforward ingredients and cooking process that make this potatoes full of flavor.

Lately, there have been a lot of changes that I am still transitioning to. Like how to improve my daily nutrition,  I have been constantly reading books about nutrition AND watching pretty interesting documentaries that emphasize a healthier way of living, as well as a healthier way of eating.

For a long time I have been eating "healthy". But about a couple of months ago I had a wake-up call of the non-pleasant one. You know those you can only blame on bad food :(

So, that made me think how awful I had been eating. Now, I am a little better about that, but still transitioning. And since I already had this blog..I thought 'why not chronicle/make the transition with the blog as well'. Mmmm? Yup.

So what does this mean? It means more healthy recipes, with the occasional non-healthy recipe of course. I've currently started reading a book, which shall remain nameless...for now, and so far I like what I am reading. I've yet to finish it and gradually follow some if not all of it's advice.

Now don't get me wrong, sometimes, you need to approach these books and dietary changes with caution. Although, more often than not we know what our body needs. All we have to do is listen to it and take action. That's why I am approaching it gradually. I want to take it in slowly to really notice and feel the changes.

Garlic + Rosemary Roasted Potatoes

Ingredients:

  • 5-6 Small potatoes (cut in forths)
  • 4-5 cloves garlic
  • 1-2 teaspoons rosemary
  • salt (to taste)
  • pepper (to taste)
  • 3-4 tablespoons EVOO 

Directions:
Preheat your oven to 400 F.
Place potatoes in a large bowl. Mush your cloves of garlic and mix with the potatoes. Add rosemary, salt, pepper and EVOO. Combine all ingredients, make sure the potatoes are very well covered with everything. Then cover a baking sheet with aluminum foil or parchment paper and pour the potatoes from the bowl onto the baking sheet. Finally onto the oven for some bakin' about 30 minutes.
