Although I was never really a fan of stuffing before being diagnosed with Celiac, now that I can't have it, I kind of want it. I began formulating ways to make it gluten-free without too much of a hassle, since preparing a Thanksgiving feast can be quite time consuming anyway.After some contemplation I thought up the idea for using Udi's Mighty Bagels.

Once I had the base for my idea, I decided to have some fun with it. The result was a very good stuffing with lots of flavor. I made this for a group of friends and everyone loved it. It was relatively easy to make, and was very good. If you're feeling experimental, you can certainly try other varieties of bagels instead of the Mighty Bagels. I just preferred those since they have dried cranberries and kind of go with the theme of Thanksgiving. I shared this stuffing with my good friends at our Friendsgiving, and everyone loved it. I will most likely be making this again for my family Thanksgiving as well.

Gluten-Free Bagel Stuffing

Ingredients

  • 1 package of

Udi's Mighty Bagels, cut into 1/4-inch chunks
1/4 cup shredded carrots
1 cup celery, cut into 1/4 inch crescents
1 medium onion, chopped
1/4 cup raisins or craisins
1/4 cup dried apples, diced into 1/4 inch chunks
1/2 cup butter
1-1/4 quarts chicken broth
2 tablespoons honey
1/4 teaspoon poultry seasoning
1/2 teaspoon salt
1/2 cup mushrooms, optional

Directions

Preheat oven to 400F. Grease a 9x13 inch baking dish.

1) Boil chicken broth in a medium sauce pan. Add the butter, carrots, celery, onion, honey, poultry seasoning and salt (also the mushrooms if desired). Boil for about 3 minutes.

2) Remove from heat and add the diced bagels, c/raisins, and apples. Using a spoon, fold the mixture to combine ingredients.

3) Place stuffing in the prepared baking dish and bake, uncovered, for 25-30 minutes, or until desired texture is reached. For drier stuffing, bake longer, and for moist stuffing, bake shorter.

4) If using to stuff a 12-15lb. turkey, decrease broth by 1 cup.
