traditional haupia easy Hawaiian desserts

My husband and I used to watch Lilo and Stitch The Series together growing up. I love the movies, I love the characters, and one of my dearest childhood friends is obsessed with Stitch. There are just so many reasons (quotable and such) why I have always loved Lilo and Stitch.

I promised my kids that I would make some Hawaiian inspired dishes to celebrate our marathon. Some are traditional, like Haupia, which is a chilled, coconut custard-like jelly bound together with corn starch. It has an almost gelatinous meets custard feel to it. I am in love with coconut flavor, so if you are too, this recipe is something you’ll enjoy because not only is it delicious, it’s super simple to make. If you’re like me, and have a can of coconut milk in your pantry and want to do something awesome with it, but want it to be simple, you have to try this recipe!

I figured this would be a great recipe to make since Nani worked as a server, and Lilo demanded desserts for dinner. I’m sure she and Stitch gobbled up haupia together, right? I would definitely LOVE to add some legit Lilo and Stitch recipes, but I can’t help but be inspired to make haupia.

Ingredients for Haupia:

1 Can Coconut Milk full fat

1/2 Cup Whole Milk

1/2 Cup Sugar

1 TSP Kosher Salt

1/2 Cup Corn Starch

Directions:

1. Bring coconut milk and sugar to a simmer in a saucepan.

2. Warm milk and whisk in corn starch to create a slurry, which is a warmed liquid (usually water) used to dissolve starch prior to adding in order to avoid clumping.

3. Add slurry to coconut mixture, and finish with a little salt.

4. Turn heat off, and continue to whisk until thick like pastry cream.

5. Gently pour haupia mixture into a plastic wrap lined mold.

6. Let cool to room temperature, then cover the top of haupia and place in the fridge. Should be ready to eat in less than an hour.
