This is a kicked up, thick version of ketchup in the way that you can use it to top a burger, hot dog, sandwich, or even an omelette. I slathered it on a BLT, using Whole Foods jalapeno bacon, and wow! It made for a speechless moment. With summer tomatoes aplenty, this is a great way to use some of them up.
2-3 lbs heirloom tomatoes, peeled , cored, and chopped up coarse (blanch in hot water for one minute, put in ice bath and peel skin)
1/4 tsp allspice
3/4 tsp cinnamon
1/2 tsp ginger (if using fresh only use 1/4)
1/2 tsp cumin
3/4 cup sugar
3 T lemon juice
1 tsp crushed red pepper flakes
1 1/2 tsp kosher salt
Add all ingredients to a heavy saucepan on medium high heat and let simmer for 15 minutes. Turn heat down to low and let continue cooking, stirring occasionally for 1 hour 15 minutes or until thick. Store in a food safe container in the fridge for about five days or in the freezer for up to three months.
