homemade potato crisps

 

I love potatoes! Maybe it’s because I was born in Idaho. My parents grew up in a small town where the high school mascot was a russet potato…no joke…their mascot was a potato!! In all fairness it did hold a pitch fork so it was a little intimidating!

I make sure that I always have potatoes because there are so many things you can make with them. This is one that my family loves. They takes just like potato chips, just a little thicker.

Homemade Potato Crisps

Ingredients

  • 3-4 Russet Potatoes
  • 1/4 cup Olive Oil
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Wash the potatoes and slice them very thin, basically as thin as you can by hand!
  2. Mix the salt and pepper in a small dish with the oil.
  3. Brush a baking sheet with some of the oil. Place the potato slices on the pan in a single layer and brush with oil.
  4. Bake at 425 degrees for about 15 minutes, watch closely so they don't burn.
  5. Enjoy!
