Inspiralized Breakfast Bun with Justin's Almond Butter, Banana & Honey

My dad and I love nut butters. I can’t tell you how many times we’ve sat on the couch after dinner, watched a movie and made peanut butter and jelly sandwiches. We both like them the same way: globs and globs of peanut butter and a little smear of jelly. 

My passion for nut butters strengthened when I became vegan in 2008, since peanut and almond butters are a heart-healthy protein source. Actually, after the summer I became vegan, I drove down to college for my senior year and had packed an almond butter and banana sandwich for the car ride (it can take up to 9 hours to get to Wake Forest from NJ!) The little sammy kept me fueled for the trip!

Of course, nut butters are high in calories, but they’re rich in protein and healthy fats. I don’t recommend you spoon it right from the tub, but a hearty dollop of almond butter on a piece of toast is a smart snack! Honestly, I attribute my success in marathon training last year to my post-run banana and almond butter. Never went a run without it.

But enough about me and my obsession with nut butters. Let’s get to Justin’s and this recipe. Justin’s happens to be my favorite brand of almond butter – it’s got that grainy texture that makes you feel like you really are eating ground almonds. Justin’s Classic Almond Butter contains dry roasted almonds and organic palm fruit oil. It doesn’t get more basic and fresh than that!

Justin’s has so many fun flavors like Chocolate Almond, Chocolate Hazelnut and Honey Peanut! Unfortunately, Lu loves almond butter just as much as I do. We’re often pointing blame at who finished the Justin’s. 

Back to the recipe. I haven’t posted many recipes for the Inspiralized Bun thus far, so I’m excited to present to you this breakfast recipe that can double as a post-workout snack recipe. The sweet potato noodle bun is seasoned with cinnamon, which brings out the nuttiness in the almond butter. The bananas are a wonderful source of potassium and the honey makes your mouth water!

After you’ve cooked your Inspiralized bun, place it on a plate.

Spoon out about 1-2 tablespoons of almond butter and spread it on top of the bun.

Place your banana slices carefully on top of the almond butter.

 I cut mine open, because it made the meal last longer. Trust me, this banana, almond butter & honey Inspiralized bun is one to be savored!

The almond butter melts over the warm Inspiralized bun and creates a sweet and smooth bite. Absolutely fabulous. Gosh, I really do love nut butters. 

My dad would be so proud.

Ingredients
1 large sweet potato (about 340 g), peeled, Blade C
olive oil cooking spray
salt and pepper, to taste
1 tsp cinnamon
1 whole egg
1 tbsp olive oil
4 tbsp Justin's almond butter
1 banana, cut into 1/2 inch slices
honey to drizzle
Instructions
Place a large skillet over medium heat and coat with cooking spray. Place in the sweet potato noodles and season with salt, pepper and cinnamon. Cook for about 7 minutes or until noodles have softened completely. The noodles will turn bright orange as they cook.
Place the noodles in a bowl and crack over the egg. Stir to combine thoroughly and coat all of the noodles.
Take out two 6oz ramekins. Place in enough noodles to pack the ramekin half-way full.
Place a piece of wax paper over the ramekins and push in to cover the noodles. Place a can of something (tomatoes, beans, etc) and press firmly down onto the noodles. Place the two ramekins in the refrigerator for at least 15 minutes.
Once the noodles are done cooling, remove the cans and paper from the two ramekins. Place a large skillet over medium-low heat and add in the olive oil. Very carefully, over the skillet, turn one ramekin over and tap the bottom with one hand until the noodles come out. Repeat for the other ramekin.
Cook (without moving) the noodle buns for about 3-4 minutes and then flip over and cook an additional 2-3 minutes or until all noodles are compact. There will be a slight char on both sides.
Place each bun on a separate plate and spread each with 2 tbsp of the almond butter. Top with 3-4 banana slices and drizzle with honey. Enjoy!
