It's Friday at 2pm and I get a text from a friend.

"Do you know where I can find tahini?"

Now this is a really vague question and a few questions come into my head...

"Where is this person? How do I tell her where to find the tahini?"

I gave my friend a general description of where tahini would be in most grocery stores. Then added, "I have an unopened jar at my house if you can't find it."

And then my mind was racing....

....What is she making? Maybe she is making hummus. I need to make hummus. I really like the carrot hummus that I made 2 weeks ago. But maybe I should try something different. I would love to make something different. When I get home, I will look through some recipes and test them out this weekend......

And my result? This very delicious edamame hummus - just in time for St Patrick's Day.

My kids love edamame. They always gobble the entire bowl as soon as I put it on the counter, not even making it to the dinner table. So my guess is that they would like an edamame hummus. And I was right, although I think the real reason M liked it was because he could take it to school for his class party.

Ingredients

  • 1/2 pound frozen shelled edamame (green soy beans), about 1 1/2 cups, thawed
  • 1/4 cup tahini
  • 1/4 cup water
  • 1/2 teaspoon freshly grated lemon zest
  • 1/4 cup lemon juice
  • 1 clove garlic, smashed
  • 3/4 teaspooon kosher salt
  • 1/2 teaspoon ground cumin
  • 3 tablespoons olive oil, divided

Directions

  1. In a food processor, puree the tahini, water, lemon zest and juice, garlic, salt and cumin until smooth. Add the edamame a handful at a time until incorporated into the mixture. With the motor running, slowly drizzle in 2 tablespoons of the olive oil and mix until absorbed.
  2. Transfer to a small bowl, drizzle with remaining oil and top with a pinch of salt.
  3. Serve with the veggies, pita chips, or pretzels.
