kale apple slaw

I made this delicious organic slaw from this week's box of veggies and fruits from Abundant Harvest Organics. My husband can't stand Apple Cider Vinegar but he loved this easy salad so now I have a way to sneak it in because it is incredibly healthy. I didn't even tell him that it was a part of the recipe. Since kale is so sturdy, this salad will keep in the fridge for 2-3 days without wilting which is awesome if your'e looking for food options to take to work or to prepare in advance. This recipe compliments just about any main dish.

Dressing Ingredients 

  • 3 tbsp cider vinegar
  • 2 tsp Dijon Mustard
  • 1/4 tsp salt
  • 3 tbsp oil
  • 2 tbsp honey
  • 1 1/2 tsp poppy seeds
  • 1/3 cup diced onion or shallot
  • pepper to taste

Slaw Ingredients

  • 1-2 bunches Kale
  • 2-4 apples

Directions

Dressing: Place all ingredients except the onion in container and whisk. Slowly add the oil while whisking till all is incorporated. Add the onion and stir to combine. 

Slaw: Wash and dry kale. Cut out the tough stems. Cut leaves into ribbons. Place in bowl with dressing. Core the apples and cut into matchsticks. Add to bowl. Toss to combine. May let sit up to one day to let flavors blend. Toss again before serving.
