I’m usually a coffee and fruit person for breakfast. When it’s cooler outside, I need something more substantial and hot, like oatmeal. It warms me up and gets me going in the morning.

I used to love oatmeal as a kid and recently rediscovered it as an (pregnant) adult. I’ve been trying to eat healthy but I refuse to eat bland food. Oats are a healthy whole grain that is packed with fiber and nutrients. However, plain oats are kinda boring. They have absolutely no flavor.

I’ve perfected my banana bread recipe (it’s really The Best Banana Bread EVER!) and thought that I’d love to find a way to make that into breakfast. Cooking the mashed banana into the oats with the spices ensures that banana bread flavor. Surprisingly the banana adds so much sweetness that you don’t really need the sugar. Although it’s a nice addition, especially when you are serving and get to swirl the melting sugar into the oats.

The walnuts are totally optional but they do add a crunch to the dish. Walnuts are actually very oily which makes them soft compared to other nuts. Toasting them firms them up a little bit and adds a smoky flavor.

Banana Bread Oatmeal

Your favorite flavors from banana bread, mixed into a healthy bowl of oatmeal.

Ingredients
  • ¼ cup Walnuts, roughly chopped (optional)
  • 1 cup Water
  • 1 cup Milk (or non-dairy milk) plus additional for serving
  • 2-3 Bananas (1/2 cup mashed, the remainder sliced for serving)
  • 1 cup Old Fashioned Oats
  • 1 teaspoon Cinnamon
  • ¼ teaspoon Nutmeg
  • â…› teaspoon Cloves
  • 2 tablespoons Brown Sugar, plus additional for servings (optional)

Instructions
  1. To toast the walnuts, heat walnuts in a dry, heavy but small skillet over medium heat for 1 to 2 minutes or until golden brown. You must stir constantly to ensure even toasting and prevent burning.
  2. Remove the walnuts from the pan and set aside to cool in a plate or bowl.
  3. To make the oatmeal, add the water, milk and mashed banana to a saucepan.
  4. Bring to a boil over medium heat, and then add the oats and spices.
  5. Cook the oats for 3-5 minutes while stirring occasionally. It will be a little soupy but that’s ok. It will firm up as it cools.
  6. Add the brown sugar, if using, and then stir to combine. You could also add the brown sugar as a topping when you are ready to serve.
  7. Divide the oatmeal into two serving bowls.
  8. Top with the remaining banana and walnuts, if using.
  9. Serve hot with a drizzle of milk and an extra sprinkle of brown sugar.
