My husband is typically not a fan of salads. I think itâs a guy thing. I love them and Iâve been looking for ways to make him love them too. I tried to pull together a few things he does love like spinach, grains, and fruit into a salad. It worked! Weâve already had this salad twice this week.
Iâm not always a fan of fruit in savory dishes but itâs the perfect fruit to cut the vinegar in the pickled onions and dressing. You donât even realize theyâre there until you bite into a little bit of sweetness.
Feel free to serve the salad and pour the dressing over the individual servings. I usually do this unless Iâm feeding a crowd. I donât like soggy salad leftovers and itâs the best way to avoid it.
