Orange Chili Chicken with Snap Peas

If you are looking for a low calorie meal with an Asian-inspired orange chicken, then this is the right dish for you. The things you will be needing for the preparation of this meal are: 2 small sliced oranges; 2 tablespoons of fresh and grated ginger; 2 cloves of thinly sliced garlic; 4 small heads of baby bok choy with separated leaves; 4 boneless and skinless chicken breasts; 2 tablespoons of chili garlic sauce; 3 tablespoons of low-sodium soy sauce or tamari; 12 oz. of trimmed snap peas and sliced scallions together with toasted sesame seeds for serving.

To prepare this dish preheat the oven to 425 degrees and tear off four 12’’ squares of foil, which you need to place on two baking sheets. Divide the oranges on separate pieces of foil and place ginger, garlic and tamari over the oranges and after that arrange the bok choy with the snap peas on top. Place the chicken on top of it all and spread with chili garlic sauce.

Cover all of it with another piece of the foil and fold each edge up and over a couple of times. Roast it for approximately 15 minutes and when done transfer each packet to a plate and, using a knife or scissors, cut an X in the center and fold the triangles. Sprinkle with sesame seeds and scallions and serve.

Shrimp Rolls

These no-cook sandwiches will provide you with the feeling of summer in a roll. The ingredients you are going to need to prepare these sandwiches are: one quarter of a cup of mayonnaise; freshly ground black pepper; one half of sour pickle, finely chopped together with one tablespoon of brine; 12 oz. of cooked, peeled, deveined and large shrimps with tails removed; one quarter of a cup with fresh parsley, flat-leaf and chopped; potato chips and pickles for serving; 2 finely chopped scallions; 8 small leaves of Bibb or Boston lettuce and 4 split-top hot dog buns.

To prepare these delicious sandwiches take a large bowl, whisk together mayonnaise, one quarter of a teaspoon of pepper and pickle brine. Add the shrimp and toss a couple of times to coat. Fold in the scallions, pickle and parsley. Take the hot dog buns and line them with lettuce then spoon the mixture with shrimp inside. Serve with potato chips and pickles, depending on what you desire.

Grilled Pork Chops with Plum and Bok Choy

This meal is perfect for a light dinner because of the juicy plums that lend sweetness to this savory dish. To prepare it you are going to need: 1 tablespoon of rice vinegar, low-sodium soy sauce and grated fresh ginger; 2 tablespoons of extra-virgin olive oil; kosher salt; 6 plums cut in quarters; 3 thinly sliced scallions; freshly ground black pepper; 4 small bone-in pork chops and 4 heads of baby bok choy.

To prepare it heat the grill to medium-high and combine in a small bowl vinegar, soy sauce, 2 tablespoons of oil and ginger and stir in the scallions. Season the pork with one half of a tablespoon each with salt and pepper and with the remaining oil, brush the bok choy and plums. Grill the pork until it is cooked through, around 5 to 7 minutes on each side. Grill the bok choy and the plums until they are lightly charred and tender, approximately 1 to 3 minutes on each side. Serve the bok choy and plums with pork and spread the scallion dressing over the top.
